Olives: Soller
Soller is a whole green olive marinated in oil with cardomon, cracked black pepper and lemon juice.
The name Soller is a sentimental nod to the bay of Soller in Mallorca where Dan decided to call his new venture Silver & Green. The bay is a natural amphitheatre surrounded by terraced mountain side covered in olive groves. As the sun shines on the trees it catches both sides of the leaves making the whole hill side shimmer silver & green.
